My brother had a severe motorcycle accident some years ago, which lost
him the use of his right arm and of his right leg (except that
prosthetic surgery allows him to walk almost like "normal" people). He
can now write — Latin script — with his left hand (he prefers to type
though ;-) ), and even sign his name, but of course he had to go make a
new signature card at the bank when he got out of hospital after his
accident.

Yes, using chopsticks with your "wrong" hand may be hard, but hand
writing is far more difficult (even in Latin, but I suppose writing
decent hanzi is not the least bit easier).
