You rt-clicked and chose "Open with..."
(OR), on the action bar right above the file listing
(sometimes below file menu), where it
displays "Organize ▾ Open ▾ E-mail Burn New folder",
click on the down-triangle next to "Open", and
"Choose default program..." there.

And that opens a popup, where you clicked Browse? And then you
browsed to the place where you installed vim8 (Usually
under "/Program Files/Vim/vim80/Gvim.exe" for native vim, or
"/Program Files (x86)/Vim/vim80/Gvim.exe" for 32-bit vim on a 64-bit
platform)?

You then clicked on the Gvim.exe file and it didn't open it with
that file?

If you want to make it the default you need to check the square
checkbox to "Alway use the selected program to open this kind of file".
