I had this same issue - it was a huge pain to debug!
Finally found that selecting 'Disable DirectDraw for screen rendering' and 'Disable deferred screen updates' did the trick. Gvim is blazing fast now!
I'm not sure if the first one is necessary - I think it's the deferred screen updates that caused the problem.
Hopefully this fixes your problem as well.
