You can't pipe to a remote server. If you really want to do that, you should pipe to a temporary file, then open it:

ls > temp-file

gvim --servername GVIM2 --remote-tab temp-file

If you're using Linux, you can pipe to a FIFO:

mkfifo temp-pipe

gvim --servername GVIM2 --remote-tab temp-pipe

ls > temp-pipe
