If so, I'd be interested in knowing how you use vim, how you find vim helpful, and whether there are any plugins that you have found especially helpful.

I've written two novels, many screenplays and teleplays, and a nonfiction book in Vim, later MacVim. I write all my exams (I teach law) in Vim. I write everything in Vim. It's a perfect tool. And now that we have Markdown (Commonmark) and Fountain (Markdown for screenwriters) it's even better.
