I think this plugin of Dr. Campbell's will do exactly what you want:

ZoomWin : Zoom in/out of windows (toggle between one window and multi-window)

I knew it existed, so this might not be a fair example, but I found
it just by searching for scripts containing the keyword "zoom" using
the vim search page, http://vim.sourceforge.net/search.php.
