Setting this option means, that you create digraphs by
pressing key1 <backspace> key2

So this causes your issue with s <backspace> s

But one usually wants to insert a digraph explicitly by
using the <Control-K> key.

Now it depends how you usually enter your digraphs. What
do you prefer?

Using the digraph option usually causes more harm than good,
so I wouldn't recommend to set this option.
