If :color default works, it means the "color" scheme you were using has
highlight commands for colour terminals, like
hi Statement ctermfg=3
but not for the gui, like
hi Statement guifg=khaki
In gvim, with the menu on, click Edit -> Color Scheme for a choice bundled with vim. You can see which color scheme you are currently using
:color
Presumably this is being set by your .vimrc, _vimrc, .gvimrc, or _gvimrc. You can use :scriptnames to find where your scheme was loaded from, $HOME/.vim/colors or $HOME/vimfiles/colors.
I suggest having a look at the files in $VIMRUNTIME/colors, and modify yours to suit. If you don't want to mess with that stuff, and want to keep the colours you have in vim, perhaps pick a scheme you like from the menu in gvim then put a :color statement in your .gvimrc or _gvimrc.
If you want to match your vim and gvim colours, the CSApprox plug-in http://www.vim.org/scripts/script.php?script_id=2390
has many fans, though it has the perspective of starting with gvim colours you like.
