I use
if has('gui_running')
set lines=999 columns=999
endif
in my vimrc, and my GTK2/Gnome2 gvim doesn't crash. On Windows, you
could use the :simalt command (e.g. ":simalt ~x" in English Windows),
but beware that the shortcut for "Maximize" is not always x depending on
UI language.
