Well, you should give a better look at these options. They may be
useful with you want to develop in some languages and for using some
scripts.

Seems you don't have gtk (at least not the required version). That's
why the gui is failing. Install gtk and then run configure and make
again.
Also, I recommend you look at the configure options of the vim
packages for some linux distribuitions (or even windows, mac etc.).
Those configurations may guide your compilantion. And, if you want a
fully featured vim build, make sure to use --with-features=huge.
