I use vim to write me emails and I have syntax=mail (also filetype=mail).
There are these syntax groups: mailQuoteExp1,...,mailQuoteExp6 which color
what you want.
Check if your color scheme is defining highlighting for these syntax groups
(but my guess is that you have "syntax off" for emails).
